Daal chawal is the meal most of us grew up on — simple, cheap, and somehow always exactly what you want. Masoor (red lentil) daal is the quickest version because the lentils break down on their own in about 20 minutes with no soaking.

What turns plain boiled lentils into something special is the tarka: hot ghee or oil with cumin, garlic and dried red chillies, poured over the daal right at the end. It sizzles, it smells incredible, and it adds layers of flavour in under a minute.

How thick should daal be?

That's personal. Some families like it thick enough to scoop with roti; others like it soupy to pour over rice. Start with 4 cups of water and adjust at the end — just make sure to add hot water so the daal keeps simmering.

Make it a full meal

Serve with plain basmati rice, a squeeze of lemon, sliced onions and achar. Add a side of fried fish or shami kebab for a classic weekend lunch.

  1. Add the lentils, water, salt, turmeric, chilli powder, ginger-garlic paste and tomato to a pot. Bring to a boil and skim off any foam.
  2. Simmer, half-covered, for 20 minutes until the lentils are completely soft. Whisk well or mash with the back of a spoon for a smooth texture. Add hot water if it's too thick.
  3. For the tarka, heat oil or ghee in a small pan. Fry the onion until golden, then add cumin seeds, garlic, dried chillies and curry leaves. Fry for 30–40 seconds until the garlic is light golden.
  4. Pour the sizzling tarka over the daal immediately, garnish with coriander, and serve with plain rice or roti.

Tips for the best Masoor Daal with Tarka

  • Red lentils don't need soaking, which makes this one of the fastest desi meals you can make.
  • Pour the tarka just before serving — the sizzle and aroma is half the experience.
  • Leftover daal thickens in the fridge. Loosen with hot water when reheating.

Frequently asked questions

Is masoor daal healthy?

Yes. Red lentils are high in plant protein and fibre and low in fat. Using less oil in the tarka keeps it lighter.

Can I make it in a pressure cooker?

Yes. Cook for 1 whistle on high, then 3 minutes on low. Let the pressure release naturally.
