If there's one dish that sums up a Pakistani Friday night, it's chicken karahi. It's named after the heavy wok-shaped pan it's cooked in, and the best versions come from roadside dhabas where the chicken hits a blazing hot karahi and is finished in under half an hour.

The good news is you don't need a special pan or any secret masala packet. This recipe uses fresh tomatoes, ginger, garlic and a few whole spices you probably already have. There's no onion and no water — the tomatoes melt down into a thick, glossy masala that clings to every piece of chicken.

What makes this karahi taste like a restaurant's

Three things: bone-in chicken, high heat, and patience at the bhuno stage. When the oil starts to separate from the masala and pools at the edges, that's your sign the flavours have come together. Most home versions taste flat because they're cooked too gently or rushed before this point.

Ingredient notes

  • Tomatoes: Use ripe, red tomatoes. If yours are pale, add 1 tablespoon of tomato paste.
  • Oil vs ghee: Ghee gives a richer, more traditional taste; oil keeps it lighter. A mix of both works well.
  • Fresh ginger at the end: Don't skip the julienned ginger — it adds a fresh, sharp bite that balances the rich masala.

Serve it with hot naan and a simple kachumber salad, and you've got a meal that easily beats takeaway.

  1. Sear the chicken. Heat the oil in a karahi or wok on high heat. Add the chicken and cook for 5–6 minutes, stirring, until it turns white on all sides.
  2. Add garlic and ginger. Add the ginger and garlic paste and fry for 2 minutes until the raw smell disappears.
  3. Cook the tomatoes. Place the halved tomatoes on top, skin side up. Cover and cook on medium heat for 8–10 minutes until the skins loosen. Pick out the skins with tongs and discard.
  4. Spice it. Add salt, red chilli powder, chilli flakes, turmeric, cumin, coriander and black pepper. Mash the tomatoes into the chicken and bhuno (stir-fry) on high heat for 8–10 minutes until the oil separates.
  5. Finish. Stir in the yogurt (if using) and cook 2 minutes. Add green chillies, julienned ginger and garam masala. Lower heat, cover for 3 minutes, then garnish with coriander.
  6. Serve. Serve hot straight from the karahi with naan, roti or tandoori paratha.

Tips for the best Chicken Karahi (Restaurant Style)

  • Use bone-in chicken — the bones give the masala its rich, sticky body.
  • Don't add water. The tomatoes and chicken release enough moisture; water makes it a curry, not a karahi.
  • High heat during the bhuno stage is what gives that dhaba-style smoky flavour.
  • For mutton karahi, use the same recipe but pressure-cook the meat with a cup of water for 20 minutes first.

Frequently asked questions

Why is there no onion in chicken karahi?

Traditional Peshawari and dhaba-style karahi relies on tomatoes, ginger and green chillies for its flavour. Onions make it sweeter and closer to a regular curry.

Can I make karahi with boneless chicken?

Yes. Reduce the cooking time in step 1 to 3–4 minutes and the bhuno stage to about 5 minutes so the chicken stays tender.

How do I make karahi less spicy?

Skip the crushed chilli flakes and deseed the green chillies. Adding 3–4 tablespoons of yogurt at the end also softens the heat.
