Biryani isn't just a dish in Pakistan — it's an occasion. Every family has its own version and its own strong opinions about potatoes. This recipe is a reliable, everyday chicken biryani that keeps the method simple without losing the layered, aromatic result you want.

The process looks long on paper, but it's really just three parts: a spicy chicken masala, half-boiled fragrant rice, and a slow steam (called dum) that brings them together. Once you've made it twice, you won't need the recipe.

The secret is in the rice

The biggest mistake beginners make is overcooking the rice before layering. You want each grain long, separate and slightly firm when you drain it. During dum, the steam from the chicken masala finishes it perfectly — and every grain picks up the flavour from below.

Serving ideas

Serve with cucumber-mint raita, a simple salad of onion, tomato and lemon, and a glass of cold mango lassi. For dawats, a plate of shami kebabs on the side never hurts.

  1. Fry the onions. Heat oil in a heavy pot and fry the sliced onions until deep golden brown (about 12 minutes). Remove half the onions and keep aside for layering.
  2. Make the chicken masala. To the remaining onions add the chicken and ginger-garlic paste. Fry 5 minutes. Add yogurt, tomatoes, salt and all the powdered spices. Cook covered on medium heat for 20 minutes until the chicken is tender and the oil separates. Add green chillies.
  3. Boil the rice. Bring a large pot of water to the boil with salt, cloves, bay leaves, cumin and cardamom. Add the drained rice and boil for 5–6 minutes until the rice is about 70% cooked — it should still break with a firm centre. Drain immediately.
  4. Layer. Spread half the rice over the chicken. Scatter half the mint, coriander and fried onions. Add the remaining rice, then the rest of the herbs, onions, lemon slices, saffron milk and ghee on top.
  5. Dum (steam). Cover tightly with foil and a lid. Cook on high heat for 2 minutes, then on the lowest heat for 15–18 minutes. Place a flat tawa under the pot if your stove runs hot.
  6. Rest and serve. Turn off the heat and rest 5 minutes. Gently mix from the sides to the centre and serve with raita.

Tips for the best Easy Chicken Biryani

  • The water for boiling rice should taste as salty as sea water — this is the only chance to season the rice.
  • Use aged long-grain basmati; it stays separate and doesn't turn mushy.
  • If you like aloo in biryani, add 2 halved potatoes (fried until golden) with the chicken in step 2.

Frequently asked questions

Why does my biryani rice turn mushy?

Usually the rice was boiled too long before layering. It should be only 70% cooked — it finishes cooking in the steam during dum.

Can I make biryani without food colour?

Yes. Use saffron soaked in warm milk for natural colour, or simply leave it out — the taste stays the same.

How long does biryani keep?

Up to 3 days in the fridge. Reheat covered with a splash of water so the rice steams again.
