Ingredients
  

  • 1 pound fresh green beans look for fresh, crisp beans, free of blemishes
  • 2 tablespoons soy sauce high-quality soy sauce
  • 3 cloves garlic minced
  • 1 tablespoon ginger minced
  • 1 tablespoon sesame oil
  • 1 teaspoon Taiwanese seasonings such as five-spice powder and white pepper
  • 1 teaspoon sugar

Instructions
 

  • Prepare the Green Beans
  • Trim the green beans to the desired length, removing any tough stems or leaves.
  • Blanch the green beans in boiling water for 3-5 minutes, ensuring they retain their bright green color.
  • Immediately transfer the beans to an ice bath to stop the cooking process, then pat dry with paper towels.
  • Cook the Aromatics
  • Heat the sesame oil in a wok over high heat.
  • Add the minced garlic and ginger, stir-frying for about 30 seconds or until fragrant.
  • Stir-Fry the Green Beans
  • Add the green beans to the wok and stir-fry for 2-3 minutes, ensuring they are evenly coated with the garlic and ginger mixture.
  • Add soy sauce, Taiwanese seasonings, and sugar to the beans, stirring constantly for another 1-2 minutes until the beans are fully coated and tender, but still crisp.
  • Serve
  • Serve hot as a side dish with your favorite Taiwanese meals such as Xiaolongbao or fried rice, or enjoy them as a standalone dish with a bowl of rice.
