Prepare the Green Beans
Trim the green beans to the desired length, removing any tough stems or leaves.
Blanch the green beans in boiling water for 3-5 minutes, ensuring they retain their bright green color.
Immediately transfer the beans to an ice bath to stop the cooking process, then pat dry with paper towels.
Cook the Aromatics
Heat the sesame oil in a wok over high heat.
Add the minced garlic and ginger, stir-frying for about 30 seconds or until fragrant.
Stir-Fry the Green Beans
Add the green beans to the wok and stir-fry for 2-3 minutes, ensuring they are evenly coated with the garlic and ginger mixture.
Add soy sauce, Taiwanese seasonings, and sugar to the beans, stirring constantly for another 1-2 minutes until the beans are fully coated and tender, but still crisp.
Serve
Serve hot as a side dish with your favorite Taiwanese meals such as Xiaolongbao or fried rice, or enjoy them as a standalone dish with a bowl of rice.
